YEHUDA'S MOROCCAN TOMATO AND CHICKPEA
SALAD |
Ingredients: |
Dressing: |
- 2 tbs. fresh lemon juice
- 1 tbs kosher white wine vinegar
- 1 tsp ground cumin
- 1 tsp paprika
- 2 tsp cayenne
- 2 tsp salt
- 4 tsp freshly ground pepper
- 4 cups olive oil

Salad: |
- 2 cups drained cooked chicken peas, rinsed
- 2 cups seeded and chopped tomatoes
- 2 cups seeded, diced cucumbers
- 2 cups chopped red onion
- 3 cups chopped fresh mint
|
Instructions: |
- Whisk all the dressing ingredients together including the
pepper
- Whisk in the olive oil until blended
- Add chick peas, tomato, cucumber and red onion
- Mix well, then refrigerate for at least 1 hour
- Just before serving, fold in mint and adjust seasoning.

Yields: 4-6 servings |
