PERSIAN CARROT SALAD |

INGREDIENTS: |
|
| |
- 1 1/4 carrots, coarsely grated
- 7 oz. apples, peeled and coarsely grated
- 2 1/4 oz. almonds, toasted and chopped
- 2 tbs. olive oil, KP
- 2 tbs. lemon juice, freshly squeezed
- 1 tsp. cumin, ground, KP
- 1/2 tsp. cinnamon, ground, KP
- 1/2 tsp. sugar

DIRECTIONS: |

| |
- Mix all ingredients together.
- Don't add salt, as it would soak up water.
- Refrigerate at least one hour
- Serve.

Yields: 6 servings. KP = Kosher for Passover |
