PASSOVER PUDDING - BABANATZA |

INGREDIENTS: |
|
|
- 6 whole matzos
- 1 cup raisins
- 6 eggs
- 1 cup chopped walnuts
- 2 green apples, peeled, cored and diced
- 1/4 cup oil
- 1/2 cup honey
- 1/4 cup sugar
- 2 tbs oil
- 1 tsp ground cinnamon
- boiling water

DIRECTIONS: |

|
- Break matzos into pieces in a large mixing bowl and
pour a little boiling water over to soften them.
- Squeeze out excess water.
- Mix raisins and eggs with matzos.
- In a separate bowl, mix walnuts, apples, oil, honey
and sugar.
- Add apple mixture to the matzo mixture and blend
thoroughly.
- Grease a deep, 1 1/2-quart, oven-proof dish and pour
in the pudding mixture.
- Sprinkle with cinnamon
- Bake for 1 hour at 350 degrees in a preheated oven.
- Serve warm, or chill and serve with applesauce.
- Serve 6 - 8
