PESACH ROAST CHICKEN WITH STUFFING (MEAT) |

INGREDIENTS: |
|
|
- 1-2 roasting chickens, cut in eights
- 1 cup chopped onion
- 1/2 cup diced celery
- 1/2 cup coarsely chopped nuts
- 6 tbs. vegetable oil
- 3 cups matzo farfel
- 1/2 tsp salt
- 1/8 tsp pepper
- ginger to taste
- garlic powder to taste
- 2 tsp paprika
- 1 egg, slightly beaten
- 1 cup chicken soup, KP

DIRECTIONS: |

|
- Saute onions, celery and nuts in oil until tender
- Add farfel and stir until lightly toasted
- Combine seasoning, egg and soup
- Add to matzo mixture
- Spread in a 9 x 13 inch glass baking dish.
- Lay pieces of cut-up chicken that have been seasoned
with ginger, garlic powder and lots of paprika very
close together over the stuffing.
- Roast for 1 1/2 hours in a 350 degrees oven or until
done and golden brown.
- Serves 6 - 8.
