PASSOVER APPLE SQUARES

INGREDIENTS: |
|
| |
- 1/2 tsp. salt
- 1/2 cup walnut oil, KP
- 1 cup matzoh meal
- 1 lemon, juice and grated rind
- 3 eggs separated
- 2 large apples, pared and sliced
- 1 cup sugar-cinnamon mixed

INSTRUCTIONS: |

| |
- Combine sugar, salt and matzo meal
- Add eggs yolks, oil and juice and grated rind of lemon
- Meanwhile, beat the egg whites till they are stiff.
- Fold in stiffly beaten egg whites.
- Pour half of this batter into a greased 8" x 8" pan
- Cover batter with thinly sliced apples
- Sprinkle with remaining batter
- Bake for 45 minutes in 375 degrees F oven
- Cool completely before cutting into squares.
