INGREDIENTS: |
|
|
- 1 head of Romaine or iceberg lettuce (check for infestation)
- 4 green onions (check for infestation)
- 1 medium onion (check for infestation)
- 2 green peppers
- 1 red pepper
- 1 English cucumber, peeled
- 8 firm, ripe tomatoes
- 4 tbs. extra virgin olive oil
- 4 tbs. fresh lemon juice
- 1 tsp. salt, adjust to taste.
- Freshly ground pepper, optional (check for infestation)

INSTRUCTIONS: |
|
|
- Wash and dry vegetables well
- Dice them neatly into 1/2-inch pieces and combine in a large bowl
- Sprinkle with olive oil and lemon juice
- Add seasoning; mix again.
- Adjust seasonings to taste.
