PASSOVER CARROT RING (PARVE) |

INGREDIENTS: |
|
| |
- 3 tbs potato starch
- 1/2 cup red sweet wine
- 1/4 cup oil
- 1/2 cup matzo meal
- 1 pound raw, grated carrots
- 1/4 cup raisins
- 1/2 cup sugar
- 1 tsp ginger
- Juice and grated peel of 1 lemon
- 1 egg
- 1/2 tsp salt

DIRECTIONS: |

- In a small bowl, dissolve potato starch in the wine.
It takes a bit of mixing.
- In a large bowl, cream the oil and matzo meal.
- Add the rest of the ingredients and mix well.
- Pour into a well-greased ring mold or casserole and
bake for 1 hour in a pre-heated 350 degree oven.
- Unmold to serve.
- Serves 10 - 12
