INGREDIENTS: |
- 2 whole Kosher ducks, washed and cleaned
- Salt and pepper
- Garlic powder
- 2 oranges, sliced
- 1 small bottle Kosher orange marmalade
- 1 cup orange juice
- ¼ cup
French dressing

DIRECTIONS: |
- Put ducks on rack in roasting pan. Season
lightly inside and outside.
- Place orange slices inside the ducks.
- Roast in 350°F for approximately 2 hours.
This should allow the skin to become crisp.
- Baste periodically with one-half the
orange juice until the ducks are ¾ done.
- In the meantime, heat in a saucepan the
orange marmalade and the other half cup of orange juice and the
Pareve French dressing.
- When the ducks are ¾ done, start basting
with this sauce. Let ducks brown a little more and get crisp.
Check the roasting periodically.
- Note: you can fill the duck with wild
rice as stuffing.
- Serves: 6
