INGREDIENTS: |
- 1 eggplant
- 2 lemons
- 1 egg
- Bread crumbs
- Oil
- 8 ounces kosher mozzarella cheese slices
- 1 can tomato sauce
- Kosher Parmesan cheese
|

DIRECTIONS: |
- Slice eggplant. Squeeze the lemons and
pour juice over the eggplant slices.
- Dip slices in egg, then bread crumbs.
- Fry in oil
- Put a layer of slices i a greased
casserole dish. Alternate layers of slices with mozzarella
cheese and tomato sauce.
- Top with Kosher Parmesan cheese.
- Bake at 350° F for 30 minutes
- Serves 8
