TEJERINGOS de ADRIANA (Spanish Donuts)
|

INGREDIENTS: |
- 8 Tbs. Margarine, unsalted (cut into 8
pieces) (KOSHER-PARVE)
- 1 Tbs. Sugar plus about 1 cup for
dusting
- 1 Pinch Salt
- 1 cup Flour, all-purpose (sifted)
- 3 Eggs, Large
- 8 cup Olive Oil, extra-virgin olive oil
for deep-frying (Aceites Peset)

INSTRUCTIONS:
|
- Combine 1 cup water, the
margarine, sugar, and salt in a small heavy saucepan
and bring to a boil.
- Stirring occasionally until
margarine melts.
- Turn the heat to low.
- Add the flour (all at once).
- Stir vigorously until the
mixture forms a ball.
- Remove from the heat.
- Add the eggs one at a time,
stirring constantly.
- Transfer to a bowl and allow
the batter to rest for 10 minutes in the
refrigerator.
- While waiting, Heat 3” of
olive oil to 365ºF in a large heavy pot.
- Transfer the dough to a
pastry bag fitted with a large star tip.
- Pipe 4” long strips of dough
into the hot oil, without crowding.
- Cook for 4-5 minutes until
golden brown.
- Drain on paper towels.
- Continue to repeat with the
remaining batter.
- Dust generously with sugar.
