AVI M’S CARNE DESTROZADO (SHREDDED MEAT)

INGREDIENTS: |
• 2 Yellow Onions,
small, peeled • 2 lb. Steak - skirt or flank
“KOSHER” • 1 Bay Leaf • Sea Salt • 3
Tbs. Olive Oil “Spanish” “KOSHER” • 1 Green
Bell Pepper small, cored, seeded, and finely
chopped • 8 Garlic Cloves, peeled and minced
• 1 Chili, small, mild, cored and chopped • 1
Tbs. Parsley, fresh, chopped (checked for
infestation) • 1 tsp. Oregano, fresh,
chopped (checked for infestation) • 2 cups

INSTRUCTIONS:
|
1. Quarter one of the onions, then put it, steak, bay
leaf, and a generous pinch of salt into a large pot.
2. Cover with water by 2" and simmer. 3. Skimming
occasionally, over medium heat until meat is very
tender, ~ 3 hours. 4. Transfer meat to a cutting
board. 5. Reserving broth in pot. 6. Trim off fat
and gristle. 7. Slice meat across the grain into
2"-wide strips. 8. Pound with a mallet, 9. Shred,
10. Set aside. 11. Bring reserved broth to a
boil over high heat and reduce by half, ~10-15 minutes.
12. Strain, discard solids, then set aside 1 cup
broth to cool. 13. Reserve remaining broth for
another use. 14. Mince remaining onion. 15. Heat
oil in a large skillet over medium heat. 16. Add
onions, peppers, garlic, and chilies, and sauté until
soft, ~ 8-10 minutes. 17. Add parsley, oregano,
tomato puree, reserved meat, and broth, and season to
taste with salt. 18. Simmer, stirring often, for
~20-25 minutes. 19. Serve.
