STIR FRY LONG BEANS (ROSH HASHANAH)

4-6 servings

INGREDIENTS:
|
1
pound long beans (check thoroughly for infestation)
3 tablespoons peanut, vegetable or corn oil
Salt to taste
1 teaspoon sugar
1 tablespoon dry sherry "KOSHER"
1/2 cup water

DIRECTIONS:
|
- Trim
off and discard the tips of the beans.
- Cut
the beans into 2 inch lengths.
- Heat
the oil in a wok or skillet and add the beans.
- Cook,
stirring over high heat about 15 seconds, then add the salt, sugar
and wine.
- Cook,
stirring, about 2 minutes.
- Add
the water, cover, and cook about 3 to 4 minutes.
- Serve
hot.
