DANIELA’S MUFFINS WITH RAISINS AND WALNUTS
|
|
|
INGREDIENTS:
|
|
|
· 2 cups Flour (sift - √ for infestation) · 1 cup
Sugar, icing type · 1 cup Parve Coffee Creamer (NOT
DAIRY) · 1 cup Walnuts, roughly chopped
· 1 cup Raisins · 7 Tbs. Canola Oil
· 2 Eggs · 1 tsp. Baking Powder
· 1 Lemon Skin, grated (scrub clean outside checking for black spots)
· 1 tsp. Sodium Bicarbonate (Baking Soda)
· 1 pinch Salt |

INSTRUCTIONS: |
|
|
1. Preheat oven to 190° Celsius. 2. In a large
bowl, combine well the flour, sugar, baking powder, baking soda and salt.
3. Make a hole in the middle of the flour mixture
and add the canola oil. 4. Mix all the ingredients
kneading well to get a thick texture. 5. Once
again, place the mixture in a bowl adding the raisins, nuts and grated
lemon and combing all together. 6. In a separate
bowl, beat the eggs and then start adding the parve coffee creamer slowly.
7. When everything is mixed, quickly pour the liquid mixture into the bowl
containing the dough combining well with a wooden spoon to get a
well-blended dough. 8. Pour a small portion of
dough mixture into the individual spaces in a muffin pan.
9. Fill each muffin space to 2/3 its capacity. 10.
Place all the muffins into the oven and bake at 190ºC for 15 minutes.
11. Remove. 12. Let cool
and serve. |
