MANOS
T's VEAL STIFADO (MEAT)
| INGREDIENTS: |
|

2
lb. Veal shoulder
·
1
onion chopped (check
for infestation)
·
1
cup dry red wine "BARKAN"
·
1
cup olive oil "SITIA"
·
4
ripe tomatoes (peeled & grated)
·
1
Tbs. tomato paste (diluted in 1 cup water)
·
1
bay leaf
·
Sea
Salt
·
2
lbs baby onions (check
for infestation)

| INSTRUCTIONS: |

1.
Brown
the veal in olive oil.
2.
Add
onion, brown a while longer and then the wine.
3.
Add
the tomatoes, the tomato paste, the bay leaf, sea salt,
pepper and 1/2 cup hot water.
4.
Cover
and simmer for 1 1/2 hr.
5.
Crisscross
the baby onions with a sharp knife, add them into the pot
and cook for another hour.
6.
Serve.
