OVEN-BAKED AUBERGINES AND GREEN PEPPERS
(PARVE)
INGREDIENTS: |
- 2 1/4 lb. green peppers
- 3 1/4 lb. aubergines (fairly large)
- 2 1/4 lb. ripe tomatoes
- 1 clove of garlic , finely chopped
- 1/2 cup Olive oil (+ as much as you need for frying)
- 1 teaspoon sugar
- Salt
- Pepper

INSTRUCTIONS: |
- Preheat oven to 390 degree F.
- Wash the peppers and remove seeds and stalks.
- Let them drain well and cut into pieces.
- Fry the peppers.
- Wash , peel and chop the aubergines in thin round
pieces.
- Fry and let them drain in absorbent paper.
- Pour ½ cup olive oil in a small cooking pan and add the
tomato to fry as well, as the salt, the pepper, garlic and
sugar .
- Let the ingredients simmer for a while.
- Place the fried aubergines in a small baking pan.
- Spread the peppers on top and pour the tomato sauce
(which you have cooked earlier) so that it is evenly
distributed everywhere.
- Bake in 390 degree F oven for about 15 minutes.
- Allow to cool a little and serve.
YIELDS: 6 + servings.
