CRETAN BARLEY RUSK MEZE (Dairy)

INGREDIENTS: |
-
4 Cretan barley rusks (A
& G VENERIS BAKERY- IRAKLION)
-
1/2 cup extra-virgin olive oil
(TERRA-AEOLICA)
-
2 firm, ripe tomatoes, grated &/or chopped
-
2-3 Tbs. Capers
-
1 med. Red onion, finely chopped
-
Salt to taste
-
2 teaspoons dried oregano
-
Grated Feta - (TERRA
AEOLICA)

INSTRUCTIONS: |
-
Hold the rusks under the water faucet for 2-4
seconds, until somewhat moist.
-
Hold up and shake off any excess water.
-
Place the rusks on a platter.
-
Drizzle with one tablespoon each of olive oil.
-
Top with grated &/or chopped tomato.
-
Season with salt.
-
Sprinkle with capers, onions, cheese and
oregano, and drizzle with remaining olive oil.
-
Serve.
YIELD: 4 servings.
