QUINOA WITH DRIED CHERRIES AND PISTACHIOS |

INGREDIENTS: |
|
|
- 1 3/4 cups quinoa, uncooked.
- 2 tbs + 2 tbs. extra virgin olive oil, divided.
- 3 tbs. scallions, finely chopped, check for
infestation.
- 2 cups water
- 1/3 cup white wine, dry
- 1/2 tsp. sea salt
- 3 tbs. lemon juice, freshly squeezed
- 1/4 tsp. black pepper, freshly ground
- 1/2 cup sweet cherries, dried, chopped
- 1/2 cup pistachios, dry-roasted, chopped
- 1/4 cup mint, freshly chopped
- 1/4 cup parsley, freshly chopped.

DIRECTIONS: |
|
|
- Rinse and drain quinoa.
- Heat 2 tsp. oil in a large sauté saucepan over
medium-high heat.
- Add scallions to pan
- Sauté 2 minutes or until tender.
- Add 2 cups water, wine, and salt to pan.
- Bring to a boil.
- Add quinoa.
- Cover.
- educe heat, and simmer 15 minutes or until liquid is
absorbed and quinoa is tender
- Remove from heat.
- Set aside and cool slightly.
- Whisk remaining 2 tbs. olive oil, lemon juice, and
pepper in a large bowl.
- Add quinoa, cherries, and remaining ingredients.
- Toss gently to combine
