APPLE-PLUM PUDDING FOR PESACH (PARVE) |

INGREDIENTS: |
|
|
- 2 cups matzo farfel
- 2 cups boiling water
- 6 eggs
- 6 medium tart apples, peeled, cored and coarsely
grated
- 1 cup golden raisins
- 1 cup plum jam / can be made with 8 apples instead
of plum jam
- 1 1/4 cups sugar (scant)
- Juice and rind of 1 lemon
- 4 tbs sweet wine
- 4 tbs honey
- 1/2 tsp salt
- 1 tsp cinnamon
- Oil for glass baking dish / Pam

DIRECTIONS: |

|
- In large bowl, mix farfel and boiling water. Cool.
- Beat eggs and add to farfel.
- In another bowl combine grated apples and raisins.
- Fold farfel mixture into the fruit
- Add jam, salt, cinnamon and sugar.
- Cover the bottom of a 3-quart glass baking dish with
little oil and heat for 3 minutes in a preheated oven at
350 degrees.
- Pour the combined mixture in and bake for 25 minutes
more.
- While this is baking, combine lemon juice and rind
with wine and honey and bring to a boil.
- Pour over pudding and bake for another 25 minutes or
until golden brown on top.
- Serve 12 - 16.
