FARFEL KUGEL FOR PESACH (PARVE) |

INGREDIENTS: |
|
|
- 3 large onions, chopped
- 1/2 cup vegetable shortening
- 1 green bell pepper, chopped
- 1 cup sliced mushrooms
- 7 cups matzo farfel
- 1/2 tsp pepper
- 2 tsp paprika
- 1 tsp garlic powder
- salt to taste
- 2 cups chicken soup, parve mix
- 2 cups water
- 4 eggs, beaten
- Variation: Vegetables can be varied using celery,
carrots or zucchini.

DIRECTIONS: |
|
|
- In a large skillet, sauté onions in shortening until
soft.
- Add bell pepper and mushrooms
- Sauté until soft.
- Add farfel and mix until slightly brown.
- Add seasoning, soup and water
- Mix together
- Add the eggs and mix. Pour batter into a
well-greased 11 x 14 - inch casserole.
- Bake for 1 hour in a preheated oven at 350 degrees
or until golden brown.
- Yields approximately 34 - 40 pieces.
