Heat oil in a large sauté pan over medium
heat.

Add onions, garlic, and ginger.
3.
Sauté, stirring often, for ~2 minutes.

Add garam masala and tomatoes.
5.
Season to taste with salt.

Sauté for ~2 more minutes.

Add meat, celery, and carrots.
8.
Cover pan, cook for 5 minutes.
9.
Vegetables should be cooked but remain crisp.
10.
Cook capellini in a large pot of boiling
salted water over high heat until just soft ~2 minutes.

Drain noodles.
12.
Then add to meat mixture in pan.
13.
Cook for 1 minute.
14.
Tossing noodles with vegetables and meat.
15.
Season with soy sauce.
16.
Serve garnished with cilantro.

Garam Masala -
[Indian Spice Mixture]
1 tsp. Black Peppercorns
·
˝ tsp. Cinnamon, ground
·
1 Tbs. Cardamom Seeds
·
1 tsp. Cumin Seeds
·
1 tsp. Cloves
·
1⁄3 Nutmeg, whole

Grind together peppercorns, cinnamon, cardamom
seeds, cumin seeds, cloves, and nutmeg into a powder.
