KOSHER GREEK RECIPES |

GREEK QUESADILLA - FRIED TORTILLAS WITH YOGURT, CHEESE AND
VEGETABLES. (DAIRY)
INGREDIENTS: |
- 1 cup of low fat Greek style yogurt
"TYRAS"
- 1/2 of an English cucumber, shredded
- 1 clove of minced garlic
- a big handful of cilantro, chopped up (check for
infestation)
- 1 tablespoon red chili sauce
"HUY FONG SRIRACHA CHILI
SAUCE"
- 4 whole wheat tortillas
- 2 cups of part skim shredded mozzarella cheese
"FIERRO"
- 1 cup of feta cheese, crumbled
"TYRAS"
- 1 12 ounce jar of roasted red peppers, chopped up
"KOSHER"
- 20 kalamata olives, quartered "KOSHER" (packed in
brine)
- 1 red onion, thinly sliced
Tzatziki
- Combine garlic, cilantro, cucumber, yogurt, and chili
sauce together.
- Stir everything together and set aside.

INSTRUCTIONS: |
- Heat pan over medium high heat and coat with cooking
spray (you could also use a little oil or
butter here, whatever you
have on hand will do).
Place tortilla in pan and allow to toast on one side,
about a minute or so.
Flip tortilla and start building.
Start with a light layer of mozzarella followed by the
red onion, peppers, olives, feta, and finally
one last layer of mozzarella. ""Be sure to layer on only 1/2
of your tortilla and resist temptation to
overstuff!""
Fold tortilla over onto itself to form a 1/2 moon.
Give it one last flip to make sure it's all hot and
melted.
Plate the quesadilla and top it with spicy tzatzik I
listed above.
