PEDRO’S LADINO SPICY FISH IN RED SAUCE
INGREDIENTS:
· 1¾ Tbs. Olive Oil (Spanish)
· 2 Tomatoes, medium, chopped
· 1 Red Pepper, seeded and thinly sliced into strips
· 1-2 Chili Peppers, fresh, seeded and cut into strips (choice)
· 6-7 Garlic Cloves, peeled and chopped
· 1 tsp. Paprika
· Sea Salt, to taste
· 1½ lb. Fish, slice into 3” pieces (Flounder, Salmon, Cod, etc.)
· Water, as needed, as a base.
SAUCE:
· ½ Tbs. Olive Oil (Spanish)
· ½ cup Water
· 1 Tbs. Paprika
· 1 Tbs. Chicken Soup Mix *PARVE* (choice)
· ½ Cilantro, bunch &/or Cilantro, finely chopped [√ for infestation]
· Sea Salt, to taste
INSTRUCTIONS:
1. In a large skillet, heat olive oil.
2. Add tomatoes and red pepper and sauté for about 5 minutes.
3. Add the chili pepper, garlic and spices.
4. Sauté for another minute.
5. Being careful not to let garlic burn.
6. Rinse and dry fish.
7. Carefully place on top of vegetable mixture.
8. Steam for 10 minutes on low heat.
9. Adding water only as needed.
10. Combine the first 4 topping ingredients and pour over the fish.
11. Taste to see if the mixture needs more salt, and then cover fish with chopped cilantro.
12. Cook for 30 minutes covered.
13. Then for an additional 10 minutes uncovered, until liquid is reduced to half and thick.
CHEF’S NOTE: To vary the flavor a bit –
· Add extra tomato sauce

1. Before adding fish, line pot with sliced kohlrabi.
2. Continue as above.
3. Add ½ cup sliced cooked carrots in the last 10 minutes.
