CURRIED WALNUT AND RICE SALAD:


INGREDIENTS:  
  • 5 cups cooked brown rice
  • 1 cup chopped scallions
  • 1 large carrot, grated
  • ½ cup chopped fresh parsley
  • 1½ cups coarsely chopped walnuts
  • Salt and black pepper to taste
  • 1 large apple, peeled

Lemon Dressing: 
  • ½ cup oil
  • ¹/3 cup lemon juice
  • 2 tbsp honey
  • 1 tbsp mayonnaise
  • 1-3 tsp curry powder, to taste
  • 2 cloves garlic
  • Salt and black pepper to taste
DIRECTIONS:  
Combine the rice, scallions, carrot, chopped parsley, and chopped nuts, Add the salt and pepper to taste. Toss to blend the ingredients. Set aside the apple.

In a blender jar, combine the Lemon Dressing ingredients. Blend until smooth. Dice the peeled apple into the dressing. Pour the dressing over the rice mixture. Mix well and serve.

Serves 6 - 8
