SPANISH RICE:


INGREDIENTS:  
  • 1 cup white rice
  • 1 tsp salt
  • ½ green pepper, diced



  • 4 tbsp Crisco (White vegetable shortening)
  • 1 small can tomato sauce
  • 2½ cups water
DIRECTIONS:  
To cook rice: Bring 2½ cups of water to boil, add rice and salt. Cover pot. Cook at lowered heat for 25 to 30 minutes. While rice is cooking, place diced green peppers in frying pan, add the shortening and sauté. Add tomato juice and sauté 2 more minutes. Drain cooked rice. Place sautéed vegetables over rice and mix.
Serves 6
