  PESACH, PASSOVER RECIPES   מתכונים כשרים לפסח    
 
 
  KOSHER PESACH RECIPES  
 

JOEL’S MATZA-VEGETABLE PANCAKES

INGREDIENTS:   
  • ·         5 sheets matza
  • ·         4 eggs
  • ·         1 cup shredded carrots
  • ·         1 cup shredded zucchini
  • ·         1 small onion grated
  • ·         1 clove garlic, grated
  • ·         Salt and ground black pepper
  • ·         4 Tbs.  extra virgin Olive Oil, plus more as needed 
              "MONTOVA"
  • ·         Special Home Sauce, sour cream or applesauce, for
              dipping
INSTRUCTIONS:
  1. Preheat oven to 250º F.   
  2. In a medium-size bowl of water, dip the matza until it is soft then tear into bite-sized pieces.  
  3. Empty the water out of the bowl.
  4. Crack the eggs into it and whisk them up.
  5. Mix the matza pieces into the egg along with the shredded carrots, zucchini, onion and garlic.
  6. Season with salt and ground black pepper.   
  7. Place a large skillet over medium-high heat with the oil.
  8. When the oil is hot, drop spoonfuls of the batter into the pan and cook until golden brown, about 2 minutes per side.
  9. Reserve the cooked fritters on a sheet pan in the warm oven until you’ve finished cooking all of the batter.  
  10. Serve the hot matza-vegetable pancakes with sour cream, or our special home sauce** or applesauce for dipping.

 

 

YIELDS:  4 servings.
